Why PHOOLZA
Good food, told badly, gets overlooked.
Across India, regions are known for foods that have been grown, prepared and eaten for generations. Many of them reach the wider market as loose, unbranded produce, with little information about where they came from or how they were graded.
We think these foods deserve better: a named origin, consistent grading, packaging that holds its own on a modern shelf, and information buyers can rely on.
Why regional foods
India eats regionally.
India's food culture is shaped by thousands of regional ingredients and traditions. Each is tied to a place: its water, its soil, the people who know how to grow and prepare it.
Naming that place is the first step towards trust. Every PHOOLZA food will carry the name of the region it comes from.
Why makhana
A simple food with a remarkable journey.
Makhana is the popped seed of the prickly water lily. It is plain, light and crisp, long familiar in Indian kitchens, and it goes from pond to puff through skilled hand work.
It is also graded by size, which makes quality something a buyer can see and compare. That suits a brand built on clear information.
Why Bihar
Because that is where makhana is grown.
Bihar is India's main makhana-growing region. The ponds and wetlands of the north of the state, and the knowledge of the people who work them, are where the crop and the craft are. Our makhana is sourced and processed there, through manufacturing arrangements; PHOOLZA does not own the ponds or the processing units.
